Simple Salmon

Ingredients:

  • 2 salmon fillets (skin-on)
  • Salt
  • Neutral cooking oil (high smoke point)
  • Lemon
  • Parchment paper (optional for nonstick surface)

Instructions:

1. Prepare the Salmon

  • Portion the salmon into even fillets.
  • Score the skin lightly with a knife to prevent curling.
  • Insert the Combustion Predictive Thermometer, with the tip pushed beyond the (visual) center of the fillet, be sure to insert past the minimum insertion line (marked on the thermometer)
  • Season both sides of the salmon with kosher salt.

2. Preheat the Pan

  • Heat a nonstick or stainless-steel pan over medium heat.
  • Add plenty of high-temperature oil (grapeseed, canola, avocado) to ensure even frying.
  • (Optional) Place a small piece of parchment paper in the pan to prevent sticking.

3. Cook the Salmon

  • Set the Combustion app to 92°F (33°C) to allow for carryover cooking up to 122°F (50°C).
  • Place the salmon skin-side down in the pan.
  • Weigh the fillets down with a heavy pan or spatula to keep the skin flat and crispy.
  • Flip the salmon once the core is about halfway done

4. Rest & Serve

  • Remove the salmon when the prediction timer hits zero and rest it skin-side up.
  • While resting, char a lemon in the pan until caramelized.
  • Squeeze the charred lemon over the salmon for extra flavor.
