 - Parchment paper (optional for nonstick surface)

Instructions:

 - Season both sides of the salmon with kosher salt.

2. Preheat the Pan
- Heat a nonstick or stainless-steel pan over medium heat.
 - Add plenty of high-temperature oil (grapeseed, canola, avocado) to ensure even frying.
 - (Optional) Place a small piece of parchment paper in the pan to prevent sticking.

 - Place the salmon skin-side down in the pan.
 - Weigh the fillets down with a heavy pan or spatula to keep the skin flat and crispy.
 - Flip the salmon once the core is about halfway done

4. Rest & Serve
- Remove the salmon when the prediction timer hits zero and rest it skin-side up.
 - While resting, char a lemon in the pan until caramelized.
 - Squeeze the charred lemon over the salmon for extra flavor.
